It is a peeler famous for peeling skins thinly. The unicursal frame is fixed by a single screw. Therefore, if the blade got dull, a single driver is required for users to easily replace it with a new blade. As the peeler is formed by squashing a round bar, instead of using a mold, the soft grip that soon fits in users' hands is one of the characteristics of Yoshita Handi-Design Studio's peeler.
As the julienne peeler could cut into strips that are a little thicker compared to that of peeler, users could cut into a suitable thickness when making kinpira (chopped burdock root cooked in sugar and soy sauce), salad, and namasu (a dish of raw fish and vegetables seasoned in vinegar).
The frame of each peeler is the same, so it is possible to switch blades, although this requires a bit of work. Please take a look at the video by a craftsman that is internationally famous for metal processing technology in Tsubame City, Niigata Prefecture.
