Mizusawa, Oshu City, Iwate Prefecture, is a casting production center with a history of about 900 years. The casting techniques that have supported the culture of Hiraizumi have been passed down to the next generation, and they continue to produce daily necessities for the modern age.
These sukiyaki pots are cast and then fired at a high temperature of more than 800 degrees Celsius, or "kiln-fired," before being finished by baking with lacquer. Another feature of the pot is that it comes with "kamakan" that can be attached to both ends of the pot.
Kamakan were originally metal rings that were passed through holes in the kettle at both ends when raising and lowering the kettle used in charcoal tea ceremonies. Just remove it when you want to put it on the fire, and put it through the links when you want to carry it. You can easily move hot pots and pans without using a pot grabber.
Thick cast-iron pots store a lot of heat, so when food is added, the temperature does not drop and the heat is spread throughout the pot. It is also suitable for sukiyaki, which is a process of "cooking and simmering" while adding more ingredients, because the fire is stable and keeps the temperature of the pot constant.
Everything arrived in good order as usual. I am very impressed by the Kiya sukiyaki pot and only wish I had bought it sooner as it is so versatile. The sasara brush does an excellent job of cleaning my cast iron wear without being harsh. I thought that the sasara would be similar to coconut brushes that I have bought elsewhere in the past, however, the sasara is vastly superior.
